Coconut Lime Rice
I am always looking for ways to spice up rice and genius hit me the other day when I was listening to this song…
Well..technically I was watching Practical Magic and the Lime in the Coconut song came on and that is when the lightbulb occurred.
Like most anything else in my life, my genius ideas come from the oddest places. I guess that is just how my brain works.
Anyway, I had planned on making oven-roasted Hawaiian chicken kabobs for dinner and decided that coconut lime rice would pair nicely with the kabob flavors.
Coconut Lime Rice
Ingredients
- 1½ cups Jasmine rice
- 13 oz can of coconut milk unsweetened
- 1 cup water
- ¾ tsp salt
- 4 Tbsp brown sugar
- 2 large limes zested and juiced
Instructions
- In a liquid measuring cup, add in the coconut milk and additional water, whisk together and pour into a pot. Place on the stovetop and stir occasionally while waiting to boil. Once the liquid is boiling add in the salt and the rice, then turn the temperature down to simmer for 15-20 minutes. Occasionally stir the rice in the pot so it doesn't stick to the bottom while cooking.
- You will know when the rice is done by the liquid being almost absorbed by the rice. Add in the brown sugar, lime zest and the juice of one of the limes. Stir to combine. Taste the rice to see if you would prefer to add in more lime juice. Serve immediately.
