Holiday Baking: Christmas Crack

Before moving to Las Vegas, I had never in my life heard about Christmas Crack…and to be completely honest the name makes me cringe. Several years ago, I was on a mission to try to change the name to Christmas Chex Mix, but to no avail.

Whatever you call this yummy goodness, it is definitely a crowd pleaser. It can easily make a lot for a crowd and it takes less than 30 minutes to make, start to finish. Be careful though, it is addicting…which is probably why it is called Christmas Crack.

Ingredients
  

  • cups Chex Rice Cereal
  • cups Golden Graham Cereal
  • 7 oz sweetened coconut shreds
  • ½ cup slivered almonds
  • 2 cups corn syrup
  • 2 cups granulated sugar
  • cups unsalted butter
  • 1 tsp vanilla extract

Instructions
 

  • In a large bowl, combine the dry ingredietns: both cereals, almonds, and coconut shreds. Be sure to use a VERY large bowl because you will need room to mix and fold the dry ingredients into the wet ingredients. Also, you can mix up the dry ingredients beforehand, but I never do and it always turns out fine in the end.
  • In a large sauce pan, combine the wet ingredients: corn syrup, granulated sugar, butter, and vanilla extract. Over medium to medium-high heat, stir the wet ingredients continually until they come to a boil and the color is a light cream color, almost white.
  • Once the wet ingredients boil, turn off heat and immedaitely pour over the dry ingredients in the large bowl. Continually fold the mixtures over each other until completely combined. Spread out on a large, greased baking sheet to cool. Serve immediately, or package in an airtight container for up to 7 days.
