Instapot Brown Noodles

This is a recipe that the 5 of us children begged my mom for dinner almost every week. It’s a sort of spin on Beef Stroganoff, without the sour cream. And bless my mom’s heart, she ALWAYS made egg noodles from scratch. I take the easy way out with Reames Frozen Egg Noodles…which is ALWAYS a staple in my freezer.

Making Brown Noodles in the Instapot proved extremely easy and has become my go-to method recently. Brown Noodles is a wonderful recipe for cold nights and is a must my in comfort foods rotation.

Ingredients
  

  • 1 large onion diced
  • 3 garlic cloves minced
  • 1-2 lb beef stew cubes
  • 4 Tbsp butter
  • 1 cup heavy cream
  • 24 oz low sodium beef broth
  • 1 bag Reames Frozen Egg Noodles
  • fresh chives for garnish
  • fresh basil for garnish
  • olive oil
  • salt and pepper to taste

Instructions
 

  • Set the Instapot to the saute setting and drizzle the bottom of the pot with olive oil, approximately a tablespoon. Add in the onion and saute for 5 minutes or so until the onion bits begin to become translucent.
  • Add in the garlic and beef cubes and salt and pepper lightly, brown the beef on each side. This will occur quickly. The goal isn't to cook the beef through, but to add flavor by searing each side of the beef before cooking it for a long time to cause the beef to tenderize.
  • Once the beef has been seared on the outside, add in the low sodium beef broth and change the cook setting on the Instapot to pressure cook on high for 50 minutes.
  • When the 50 minutes are up, rapid release the pressure and add in the butter and heavy cream. Add in more salt and pepper if needed. Lastly, add in the noodles and let soften in the liquids for 10 minutes with the lid back on the Instapot. Don't set any time or change the setting of the temperature. Leave it at warming. The noodles will cook quickly. Once the noodles are soft enough, serve immediately and garnish with desired fresh herbs. My favorite is chives and basil.
