Mango Pineapple Salsa Fresco
Mr. Man would do just about anything for fresh pineapple. If I have a fresh pineapple and need it for a recipe, I have to chop it up and prepare it before he knows what I’ve done. Otherwise, it disappears faster than a fart in a fan factory. So when I decided to refine my pineapple mango salsa recipe, I had to do it while he was at work. Don’t worry, I shared the end results with him…and he loved it. I loved it…no, cooking, a lot of chopping. AND…it’s heart healthy, dairy-free, gluten-free, paleo, whole 30, vegetarian…you name it…well except keto. This recipe is definitely now in our regular food rotation! Mango Pineapple Salsa Fresco
ingredients:
1 large fresh pineapple
2-3 fresh mangos
1 large red bell pepper
1 large shallot, or 1 medium purple onion
1 large jalapeno
1/4 cup fresh cilantro, chopped
1 tsp paprika
directions:
Chop everything…secret tip, if you purchase a pineapple at Costco or Sam’s Club, if you ask the produce workers, sometimes they will core the pineapple for you…for FREE! (You know you said those last 2 words with an Adam Sandler’s voice) I like to chop the pineapple and mango into large chunks and every other ingredient into small chunks. Also, if you take the seeds and ribs out of the jalapeno it won’t be as spicy. You will probably also want to wear latex gloves when handling the jalapeno, especially if you wear contacts. I’ve learned that little tidbit the hard way. If jalapenos make your digestive tract just loathe you, substitute the jalapeno for an Anaheim pepper. After everything is chopped up and combined in a bowl, add in the paprika and toss to combine. Place in fridge and chill for at least 2 hours.
