Peach Cobbler
Autumn is easily my favorite season, I love the cooler temperatures and the sweater weather. I also love all of the fresh ingredients that are usually available in the fall, peaches, pears, apples, squash, pumpkins, corn, etc. As soon as peaches start becoming available, I am baking up a storm with recipes where peaches are the star of the show. This Autumn Peach Cobbler is no different.
There is a local orchard in the northern part of Las Vegas, Gilcrease Orchard. We frequent there often and my boys love to do the you-pick. If you live in Vegas, or are visiting Vegas, Gilcrease Orchard is a must do activity, especially for families…and ESPECIALLY if you go between September and December. They have all sorts of activities for kids. Their apple cider donuts are TO DIE FOR!!!
Peach Cobbler
Ingredients
- 4 cups peaches peeled and sliced
Peach Filling
- ½ cup brown sugar packed
- ½ cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp ground cinnamon
- ¼ tsp ground cloves
Cobbler Topping
- 1½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ⅓ tsp salt omit if using salted butter
- ⅓ cup brown sugar packed
- ⅓ cup granulated sugar
- ½ cup unsalted butter cubed
- ⅓ cup boiling water
Crumble Topping
- ½ cup brown sugar packed
- ¼ cup granulated sugar
- 1 tsp ground cinnamon
- ⅓ cup unsalted butter melted
- 1 cup chopped pecans
Instructions
- In a 9×13 inch baking pan, grease the sides and bottom with nonstick cooking spray. Spread the peach slices out evenly around the bottom of the pan. In a small bowl, add the ingredients in the peach filling and stir until combined. Then sprinkle over the peaches and fold into the peaches until they are coated with the filling mixture.
- In a blender or food processor, add in the ingredients for the cobbler topping, except the butter and the boiling water. Combine together. Add in the butter cubes into the cobbler topping and pulse in the blender until combined. Then while the blender/food processor is on it's lowest setting, pour in the boiling water slowly while it combines with the rest of the cobbler topping ingredients. Once combined, spread over the peaches.
- In another small bowl, add in the ingredients for the crumble topping and stir until combined. Spread over the top of the cobbler topping evenly. Bake at 375℉ for 45-55 minutes or until the topping is crispy and the juices are bubbling.
- Let sit for 5-10 minutes until slightly cooled. Serve with whipped cream or vanilla bean ice cream.
Recipes with autumn peaches are my specialty. Although, sometimes peaches are something I crave even when they aren’t fresh, which is why I always have at least one bag of frozen peaches in my freezer.
