Now that school is in full swing, extracurriculars are consuming our lives, and germs are being passed around…quick dinners have become the norm around here. I definitely love pouring my heart into preparing meals for friends and family, but most often I just don’t have the time or energy during the week to be very elaborate. Shredded Beef Brisket
Sometimes when I meal plan for a week, I like to make it as easy as possible. Which means cooking a large amount of a protein and then divvying it up between several meals. One of my favorites is to roast a beef brisket in my instapot. Whenever I do this I make sure I roast enough protein to be able to use in at least 3 meals. This last week we had a meal with brisket sliced up, roasted sweet potatoes, and fresh spinach and strawberry salad. Instapot Mongolian Beef
Meal planning this week has pretty much been non-existent. We have so much going on with this being the last week of school, that I don’t know when or where we will be every night around dinnertime. I have my staples like marinara, pasta, meatballs, hashbrowns, eggs etc. So we do have food I can throw together in a pinch. Tonight is the only night we have where I planned instead of whipping something up. This Mongolian Beef was a huge hit tonight. Instapot Beef Fajitas
Marinade Ingredients: 1/2 cup fresh lime juice 1Tbsp Chili Powder 1tsp fresh garlic or 2 large garlic cloves 1tsp Ground Cumin 1/2tsp Paprika 1/4tsp salt Olive Oil Combine all ingredients together and set aside while preparing meat. Ingredients for Fajitas: 2.5-3lb Flank Steak, cut into thin strips 2-3 medium Sweet onions, cut into thin strips 3 Bell Peppers (your choice in colors), cut into thin strips Olive Oil Tortilla Shells, my family prefers flour tortilla shells Toppings such as sour cream, guacamole, cheese, lettuce After cutting the flank steak into thin strips, place in bowl with marinade being sure to cover all of the meat with the marinade.
