Enchiladas are easily one of my most favorite Mexican meals. I have so many variations of enchiladas in my meal arsenal that I could easily make a different type every night for a whole month. Easy Chicken Enchiladas
My family absolutely loves Mexican food. We have to have at least one dinner a week that is some sort of Hispanic recipe. I am also super blessed to have a couple of best friends who are Hispanic and amazing at cooking. So I have learned a thing or two from them. Creamy Chicken Enchiladas
Enchiladas are a family favorite…and I never make it exactly the same. This time around I didn’t realize I was out of canned green chilis, but I did have mini sweet bell peppers so I roasted those in the oven as a substitute.
