Pumpkin Molasses Cookies
Molasses cookies are a family favorite. When I announced I was going to make a pumpkin version of them I received quite a few whines and a couple of “why mess with a good thing?” But I was not deterred. I was on a cookie making mission and could not be swayed one way or the other. EGGLESS – Royal Icing
Developing an eggless royal icing was never on my to-do list, but I thought I had some meringue powder in my baking supplies. So instead of cookie cutting, frosting, sprinkling; we like to make candy cane sugar cookies. It still allows them to be involved, but it isn’t nearly as messy. Between you and me, I think they prefer the candy cane cookies because rolling out and shaping the dough is quite a bit like playing with playdoh. These cookies can easily be decorated as well with sprinkling of powdered sugar or addition of crushed candy canes…
