    Meal Planning Monday

    Mondays are my meal planning and prep days.  I know…it’s somewhat unusual.  Most people like to plan, shop and prep on the weekends.  I find planning and prepping during the week, while the older amigos are at school, is not only easier but gives me time to be more creative with the meals I choose.  With Bean and Keegs approaching teen years, their appetites have increased significantly in the last year.  I’ve had to get rather creative with meals and snacks to keep them appeased and well fed.  Someday soon I will have 4 boys who are teenagers and older and I suspect that I will feel like I am…

    Instapot Honey Sesame Chicken and Rice Bowl

      Another instapot recipe win for our family.  I even substituted cauliflower rice for the jasmine rice.  The chicken was moist and flavorful and the sauce was a nice consistency.  Keegs said he thought it was spicy, but the rest of us completely disagreed.  In all, I only spent 35 minutes preparing and cooking; and any recipe that is yummy and quick/easy to prepare is a win in my book.  This meal will definitely be added to our monthly rotation.  Also, I didn’t realize I didn’t have enough soy sauce, so I did equal parts soy sauce and Worcestershire sauce.  Couldn’t taste the Worcestershire sauce at all.  It tasted like…

    Hawaiian Kalua Pork-Instapot

    I.AM.LOVING…my instapot!!!!!!  Best appliance ever!  My mom even showed me how to hard boil eggs in it yesterday.  Tonight I made this recipe and it was a huge hit with all 4 boys…well the 3 amigos and Mr. Man.  Mr. Man kept saying the pork smelled like bacon…can’t go wrong with bacon smell.  The only 2 changes I made with the recipe was that I had to cook the pork roast for 65 minutes for it to be fork tender and I added 2 cloves of garlic minced to the marinade.  It even tasted amazing with cauliflower rice.

    Instapot Beef Fajitas

    Marinade Ingredients: 1/2 cup fresh lime juice 1Tbsp Chili Powder 1tsp fresh garlic or 2 large garlic cloves 1tsp Ground Cumin 1/2tsp Paprika 1/4tsp salt Olive Oil Combine all ingredients together and set aside while preparing meat. Ingredients for Fajitas: 2.5-3lb Flank Steak, cut into thin strips 2-3 medium Sweet onions, cut into thin strips 3 Bell Peppers (your choice in colors), cut into thin strips Olive Oil Tortilla Shells, my family prefers flour tortilla shells Toppings such as sour cream, guacamole, cheese, lettuce After cutting the flank steak into thin strips, place in bowl with marinade being sure to cover all of the meat with the marinade.  Set aside…
