Whole Wheat Bread+heart healthy
When my dad was a navigator in the Air Force (30+ years ago), his call-sign was Dough Boy. For the longest time, I thought it was due to his love of all things doughy…donuts, cinnamon rolls, bread, rolls. It was not until I was well into adulthood where I put 2-and-2 together and realized Dough was his name ‘Doug H’. Still, his love of all things doughy has been with him his whole life.
After his heart attack and double bypass surgery a couple of years ago, life had to change. My mom began making this recipe to replace the regular white bread that they were used to.
Whole Wheat Bread+Heart Healthy
Ingredients
- 3 cups warm water 200°F, no warmer
- 2 Tbsp yeast
- 2 Tbsp Lecithin
- 1/3 cup honey
- 1/3 cup avocado oil
- 1 Tbsp salt
- 7 cups whole wheat flour approximately
Instructions
- In a large mixing bowl of a stand mixer put water, yeast, lecithin, avocado oil, and honey. Mix with the paddle mixing tool until barely combined. Let sit for 10-15 minutes to let the yeast activate.
- Add in the salt; mix. Add 4 cups of flour and mix until the dough mixture is smooth. Add more flour until the dough forms a ball and comes clean from the bowl. The amount will be determined by the humidity in the air. To make the 3 loaves of bread, use about 7 cups of flour. Replace the paddle mixing tool with the kneading tool. Let the mixer knead for about 6-8 minutes.
- Place dough in a well oiled large bowl to rise. Cover with non-stick parchment paper and a towel. It will take about 45-60 minutes to rise. Punch the dough down and work all the air out of the dough.
- Divide the dough into thirds and form into loaves. Use a food scale to be precise. Place in prepared loaf pans that have been sprayed with nonstick spray and let rise about 20-30- minutes or until the dough has risen above the edge of the pans. Bake in a 375°F oven for 15-20 minutes until the internal temperature is 160 degrees. Let cool for about 15 minutes and then turn out on a rack to cool.
- Store in an airtight container or Ziplock bag for up to a week. Or freeze for up to 4 months.
