Spicy Tomato Soup

- 1 lb pork sausage
- 2 large shallots diced
- ⅔ cup carrots peeled and diced
- 2 large garlic cloves minced
- ½ tsp red pepper flakes
- 1 tbsp fresh rosemary minced
- 1 tsp dried oregano
- 6 oz tomato paste
- 2 cups marinara sauce
- 32 oz chicken stock
- 1 lb gnocchi pasta
- salt and pepper
In the large pot, drizzle 1 tbsp of olive oil and add in the pork sausage. Sauté until most of the sausage is no longer pink. Then add in the shallots, carrots, garlic, oregano, red pepper flakes, and rosemary. Sauté until the onion and carrots soften, about 5-7 minutes.
Add in the tomato paste and the marinara sauce. Stir to combine and allow to warm through and begin to bubble slightly. Add in the chicken stock and allow to come to a boil, stirring often.
Add in the gnocchi into the soup and let simmer for another 5 minutes to allow the gnocchi to cook and soften. Serve immediately and garnish with fresh rosemary if desired.
