15-Minute Meal: Roasted Red Pepper Alfredo

Sometimes meals are planned and food is prepped…other times winging it is the key. I always have certain ingredients in my kitchen, at least one jar of roasted red peppers is definitely one of those ingredients. One of my favorite ways to use roasted red peppers is pureed in sauces. This particular recipe is a not only a family favorite, it takes 15 minutes to make…start to finish.

The sauce is another one of my quick sauces made in the blender. I like to make it when the pasta is cooking. When the most time consuming step in a recipe is waiting for the water to boil and then cook the pasta, it’s a winner in my book.

Roasted Red Pepper Alfredo

Ingredients
  

  • 1 lb fetuccinnie noodles
  • 16 oz jar of roasted red pepeprs
  • ½ cup whole milk
  • 8 oz cream cheese
  • 1 cup shredded parmesan cheese
  • 1 tsp Italian seasoning
  • 3 large garlic cloves chopped
  • salt and pepper
  • fresh basil

Instructions
 

  • Cook fettuccinie noodles according to the directions on the box for al dente.
  • While the pasta cooks, in a blender add in the roasted red peppers (not the oil from the jar), garlic, Italian seasoning, cream cheese, whole milk, and ¾ cup of the parmesan cheese. Blend together until creamy. Depending on the consistency of the sauce, you may want to add some pasta water to the mix as well.
  • Once the pasta is finished cooking, drain and add the pasta back into the pot. Pour in the sauce from the blender and stir to combine. Salt and pepper to taste. Top with the rest of the parmesan cheese and some fresh basil.
