Roasted Red Pepper Alfredo

- 1 lb fetuccinnie noodles
- 16 oz jar of roasted red pepeprs
- ½ cup whole milk
- 8 oz cream cheese
- 1 cup shredded parmesan cheese
- 1 tsp Italian seasoning
- 3 large garlic cloves chopped
- salt and pepper
- fresh basil
Cook fettuccinie noodles according to the directions on the box for al dente.
While the pasta cooks, in a blender add in the roasted red peppers (not the oil from the jar), garlic, Italian seasoning, cream cheese, whole milk, and ¾ cup of the parmesan cheese. Blend together until creamy. Depending on the consistency of the sauce, you may want to add some pasta water to the mix as well.
Once the pasta is finished cooking, drain and add the pasta back into the pot. Pour in the sauce from the blender and stir to combine. Salt and pepper to taste. Top with the rest of the parmesan cheese and some fresh basil.
