Copy Cat: Pei Wei Chicken Wraps
I don’t eat at Pei Wei’s often, but when I do, I always have to have their chicken wraps. They are SO tasty, but since I don’t get to go to Pei Wei’s as much as I’d like, I decided I needed to figure out how to recreate them at home.
I’ve also been on a kick lately of tricking my family into trying new things. I had some left over cremini mushrooms in the fridge and decided to add them into this recipe instead of only having ground chicken. If you are most decidedly not a fan of mushrooms, just exchange the mushrooms for another pound of ground chicken.
And in reverse, if you are vegetarian or vegan, switch out the ground chicken for doubling the mushrooms. Both are equally tasty and are incredibly cheap. Per serving is right around $2.45, of course, this goes up or down depending on the area you live in and what the cost of living is. That being said, you won’t find a healthy meal this cheap at any restaurant. Pei Wei’s Chicken Lettuce Wraps are nearly $8 for one serving.
Pei Wei Chicken Wrap
Ingredients
- 1 lb ground chicken breast
- 2 cups diced cremini mushrooms
- 1 cup cashews chopped
- ⅓ cup green onions chopped
- ½ cup hoisin sauce
- 1 large head of butter lettuce
- sesame seeds
- olive oil
Instructions
- In a large frying pan, drizzle olive oil over the bottom and brown the ground chicken.
- While the chicken browns, chop the mushrooms, green onions, and prepare the lettuce.
- When the chicken is finished cooking through, add in the mushrooms, hoisin sauce, and the white parts of the chopped green onions. Saute while stirring for 5 more minutes to soften the mushrooms and combine the flavors.
- Remove from heat and add in the cashews and green part of the onions. Sprinkle with sesame seeds.
- Scoop into lettuce leafs and serve immediately. Srinkle with more sesame seeds if desired.
Notes
If you are a vegetarian or vegan, you could do cremini mushrooms chopped instead of any chicken.

Another added benefit of making these at home is you control the ingredients. At Pei Wei’s one serving the caloric intake tops out at right above 800 kcal. With my recipe, you can consume almost 3 servings for the same amount of calories.
