Instapot Cajun Sausage and Cheesy Rice

After living in Mississippi a decade and a half ago, all things Cajun quickly crept into my flavor palate. Just like most of the other recipes I have in my top favorites, anything Cajun is PACKED full of flavor with each bite.

Jambalaya is definitely my favorite Cajun meal, but when your family isn’t a huge fan of seafood or spice…a girl creates another Cajun flavored meal. Plus who can turn down any super cheesy meal?

Instapot Cajun Sausage and Cheesy Rice

Ingredients
  

  • 1 ½ cups Jasmine rice
  • 48 oz low sodium chicken broth substitute for water if desired
  • 1 large Poblano pepper chopped
  • 2 jalapeno peppers chopped
  • 1 red bell pepper chopped
  • 1 medium onion chopped
  • 13 oz Polish sausage chopped
  • 12 oz Velveeta cheese cubed
  • 2 Tbsp Cajun seasoning
  • 3 Tbsp tomato paste
  • salt and pepper to taste
  • avocado oil
  • green onions for garnish

Instructions
 

  • Place the Instapot on saute and add in a drizzle of avocado oil, the peppers, onion, sausage, and Cajun seasoning. Saute for 5 minutes.
  • Pour in the chicken broth and the rice, pressure cook for 10 minutes. Once done, rapid release the steam, add in the cubed Velveeta cheese and stir continuously until completely melted through. Add in salt and pepper to taste. Serve immediately, and garnish with green onions.

If you use brown Jasmin rice, be sure to adjust the cooking time. Brown rice tends to take longer to cook. Another tasty substitute would be quinoa or couscous. Hope y’all are having an amazing week!
