Microwave Peanut Brittle
I am on a microwaving candy kick at the moment. After mastering fudge in the microwave, I decided peanut brittle was the next only choice. Anything with toffee flavors is a love in my book. So peanut brittle has always been a must during the holiday baking season.
No candy thermometer, no stirring like crazy while the sugar and corn syrup boil on the stove top. This recipe takes less than 20 minutes. If you love peanut brittle and want to try your hand at making it in the microwave, then check this recipe out.
Microwavable Peanut Brittle
Equipment
- glass microwavable bowl
- greased baking sheet
- rubber spatchula
Ingredients
- 1 cup granulated sugar
- ½ cup light corn syrup
- 1 cup salted peanuts
- 1 tsp butter unsalted
- 1 tsp vanilla extract
- 1 tsp baking soda
Instructions
- Grease the bottom of the baking sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes.
- Stir in peanuts and microwave on high 3 minutes more, then stir in butter andvanilla and microwave for 1½ minutes.
- Stir in baking soda until light and foamy. Pour onto the greased baking sheet and spread thin. Cool completely and break into pieces. Serve immediately or store in an airtight container for up to a week.
