Right now, the weather has decided to warm up enough to feel like spring…but in the 8 years I’ve lived in Las Vegas, that is rather typical. Creamy Chicken Enchiladas
Enchiladas are a family favorite…and I never make it exactly the same. This time around I didn’t realize I was out of canned green chilis, but I did have mini sweet bell peppers so I roasted those in the oven as a substitute. Instapot Taco Chicken Soup
Instapot for the win again tonight. Everyone loved this Taco Chicken Soup. Super easy and quick recipe, as well as a cheap meal. Also, this recipe fits into the Macros diet. The consistency was in between a soup and a chili so this would be perfect over a baked potato, russet or sweet. Serving size is approximately 1.4 cups when converted from grams.

Marinade Ingredients: 1/2 cup fresh lime juice 1Tbsp Chili Powder 1tsp fresh garlic or 2 large garlic cloves 1tsp Ground Cumin 1/2tsp Paprika 1/4tsp salt Olive Oil Combine all ingredients together and set aside while preparing meat.
