Quick Instapot Lasagna
My family has absolutely no Italian heritage, but my boys could eat anything pasta and/or anything with cheeses and marinara til they die. When I cook a recipe and can make it super quick in my instapot, everyone is happy. This recipe takes less than 30 minutes start-to-finish and is a definite crowd pleaser. If you want the vegetarian/vegan version or the gluten-free tips then scroll to the bottom. Enjoy! To make this dish vegetarian, instead of pork sausage, diced eggplant and zucchini are super yummy. Moroccan Chili and Couscous
Back before Pinterest, I watched the Food Network channel religiously. Rachel Ray, Giada, and Sunny Anderson were some of my favorites. I especially loved Rachel’s 30 Minute Meals. I like to make this in advance, but not more than a few days. The crispiness begins to change and the texture becomes funny. I also like to top it with several variations. …

Oven-Baked Zucchini Chips
Zucchini is a vegetable that I wish I loved. Mushy zucchini makes my skin crawl. Well…this super easy recipe not only checked all of the boxes for my taste buds, but it was also a huge hit with the boys. I have made these in the oven and in an air fryer. Both turned out equally yummy. Yellow squash and summer squash also work great in this recipe as well. Do you have any recipes with zucchini that I should try? Oven-Baked Zucchini Chips ingredients: 1 zucchini, can also use yellow squash 2 eggs 1/2 cup heavy cream 2 cups gluten-free Panko breadcrumbs 1/4 cup shredded Parmesan cheese 1/4 tsp salt 1/2…
