Oven-Baked Zucchini Chips

Zucchini is a vegetable that I wish I loved.  Mushy zucchini makes my skin crawl.  Well…this super easy recipe not only checked all of the boxes for my taste buds, but it was also a huge hit with the boys.  I have made these in the oven and in an air fryer.  Both turned out equally yummy.  Yellow squash and summer squash also work great in this recipe as well.  Do you have any recipes with zucchini that I should try?

Oven-Baked Zucchini Chips

ingredients:

1 zucchini, can also use yellow squash

2 eggs

1/2 cup heavy cream

2 cups gluten-free Panko breadcrumbs

1/4 cup shredded Parmesan cheese

1/4 tsp salt

1/2 tsp pepper

1/2 tsp paprika

directions:

Slice zucchini into rounds that are no thicker than 5mm.  Thick slices will not cook evenly.  After preparing the zucchini, in one shallow container (I use cake pans) mix together the eggs and cream til combined.  In another container combine breadcrumbs, cheese, salt, pepper, and paprika.  Take the zucchini slices and first cover them in the cream and egg mixture, then cover them in the breadcrumb mixture.  If baking in an oven, place the breaded zucchini on a rack that is on a cookie sheet.  If baking in an air fryer, place directly into the air fryer basket.  Bake in the oven at 375 degrees F for 18-20 minutes or in the air fryer at 390 for 15 minutes.

Extra Tip: if you’d like to turn this into a Keto recipe, omit the breadcrumbs and use Kraft powdered parmesan cheese.  Omitting the breadcrumbs and adding the powdered parmesan cheese will change the nutritional value.
