Donut Batter
- 3 cups all-puprose flour
- 1 cup granulated sugar
- 2 tbsp granulated sugar
- 1 tbsp baking powder
- 2 tsp strawberry extract
- ½ tsp almond extract can substitue for vanilla
- 4 tbsp unsalted butter melted
- ¾ cup greek yogurt low fat vanilla
- ⅓ cup milk can substitue for almond milk
- 3 large eggs
Icing
- 1 cup frozen straberries thawed
- 2 cups powdered sugar
- ⅛ tsp salt
- 2 tsp strawberry extract
Donuts
In one large bowl, combine flour, granulated sugar, and baking powder. Whisk to combine, set aside.
In another bowl, combine yogurt, milk, eggs, extracts, and melted butter. Whisk to combine.
Add wet ingredients to the dry ingredients and whisk with an electric mixer until the ingredients are combined. Don't over mix.
Spoon the batter into a plastic bag or a piping bag and pipe inot a greased donut pan. Bake at 325°F for 12-14 minutes or until the tops are slightly brown. Let cool completely before icing.
Icing
Blend the defrosted strawberries and then strain the seeds out.
Add in the salt, extract, and 1 cup of powdered sugar at a time. Whisk in between each addition of sugar. Keep adding powdered sugar until the icing is a thick yet liquid consistency.
Once completely combined, dip the tops of each donut into the icing and then place on a cooling rack to allow any extra icing to drop below.
Top with desired sprinkles and serve immediately, or store in an airtight container for up to a week.
