Ingredients
  

  • 1 ½ cup creamy peanut butter
  • ½ cup butter room temperature
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 2 ¼ cup powdered sugar or as needed
  • 12 oz semi-sweet chocolate chips
  • 3 Tbsp shortening

Instructions
 

  • Combine peanut butter, butter, vanilla, and salt in a large mixing bowl. Mix until combined. Add in the powdered sugar 1 cup at a time. The proper texture of the dough will be a soft playdoh consistency. If you find that you've added the 2¼ powdered sugar and it isn't a soft playdoh consistency, add in powdered sugar ¼ of a cup at a time, mixing in between each addition until the proper texture is achieved.
  • Roll the peanut butter mixture into 1-inch balls and place on a silicone baking pad or parchment paper. Refrigerate while preparing the chocolate dip.
  • Place the chocolate chips and shortening in a microwave-safe bowl. Microwave 30 seconds at a time, stirring each time afterward. Repeat until the mixture is smooth.
  • Take the peanut butter balls out of the refrigerator and insert a toothpick (or I like to use kabob skewers) in the center of a peanut butter ball and dip into the melted chocolate approximately ¾ of the way up. Place back on the parchment paper or silicone pad to let the chocolate harden. Once the chocolate sets, refrigerate in a bag or plastic container.
