Honey Lemon Chicken Ramen

- 2 tbsp avocado oil
- 1 medium purple onion
- 2 lbs ground chicken breast
- 1 tbsp fresh ginger minced
- 3 large garlic cloves minced
- 1 lb ramen noodles
- 1 cup matchstick carrots
- 1 large red bell pepper sliced thinly
- 1 tbsp sesame seeds
- ½ cup green onions sliced
Marinade Sauce
- 3/4 cup low sodium chicken stock
- 1-2 large lemons juiced
- ⅛ cup Mike's Hot Honey
- ¾ cup honey
- ¼ cup low sodium soy sauce
- ¼ cup apple juice
- 2½ tbsp cornstarch
In a large wok, (or skillet), drizzle the avocado oil and add in the purple onion. Saute for a few minutes until nice and browned.
Add in the garlic and ginger and saute for another minute or two. Then add in the ground chicken and saute until thoroughly cooked with the onion, garlic, and ginger.
While the onions, ginger, and garlic saute; in a large bowl combine the ingredients of the marinade except the cornstarch and ¼ of a cup of the chicken stock. Whisk together until completely combined. In a separate cup combine the cornstarch and reserved chicken stock. Whisk vigorously until they are combined. Add into the rest of the marinade sauce, whisk together again until combined.
Pour the sauce over the chicken mix in the wok, add in the green onions and stir until the sauce has thickened.
In another pot, boil water and cook the ramen noodles according to the packaging. Plate first with the noodles, then the carrots on one side and the red peppers next to the carrots. Then scoop the honey lemon chicken mix over the top. Sprinkle with sesame seeds and serve immediately.
