- 3 large chicken breasts cubed
- ⅓ cup ketchup
- ½ cup brown sugar
- ¼ cup soy sauce
- ⅓ cup shallots diced
- 3 large garlic cloves minced
- ½ cup green onions chopped
- 2 tbsp fresh ginger minced
- ¼ cup chicken stock
- 2 tbsp olive oil
- salt and pepper
- fresh parsley
- sesame seeds
In a wok or large skillet, drizzle 1 tbsp of olive oil over the bottom and begin browning the chicken. Cook it thoroughly, then remove from the pan and let rest on a plate for a few minutes.
Back in the wok, add in the shallot, garlic, and ginger with the other tbsp of olive oil. Sauté for a minute or so and then add in in the ketchup, green onion, brown sugar, soy sauce, and the chicken stock. Whisk to combine and then continue to whisk while the sauce comes to a rolling boil.
Add the chicken back into the sauce and let simmer while the ramen noodles cook. Cook the noodles according to the directions on the box for al dente.
When the ramen is finished, drain it and then add into the chicken and sauce. Toss with tongs to completely coat the ramen. Serve immediately with fresh parsley and sesame seeds to garnish the top.
