Lemon Bar Blondies

Ingredients
  

Blondies

  • 2 cups unsalted butter room temperature
  • 3 cups granulated sugar
  • 4 large eggs
  • 1 tbsp lemon oil
  • ½ cup whole milk
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • ½ tsp salt

Lemon Icing

  • 1 lb powdered sugar
  • ½ tsp salt
  • 1 large lemon juiced
  • cold water
  • sprinkles optional

Instructions
 

  • In a large bowl, whip butter for several minutes until it becomes light and fluffy.
  • Add in sugar and whip again for several minutes until light and fluffy again.
  • Add in the eggs, lemon oil, and whole milk and whip again for another minute.
  • In a seperate bowl, combine dry ingredients; the flour, baking soda, and salt. Whisk to combine. Then add in the dry ingredients into the wet ingredinets ⅓ at a time, lightly beating until barely combined. After adding in the last of the dry ingredients, beat until barely combined.
  • In a greased 13"x10" baking sheet, pour batter and smooth out until it is evenly distributed throughout the pan. Bake at 350°F for 30-35 minutes. Let cool completely before icing.

Icing

  • In a large bowl add in powdered sugar and salt. Squeeze in the lemon juice from a fresh lemon and begin whisking together. Add in 1 tbsp at a time the cold water until the icing reaches a slightly runny consistency. Top with sprinkles if desired. Lemon zest would also be an amazing addition on top of the icing as well.
