- 1 lb ground beef
- 2 Tbsp taco seasoning
- 15 oz black olives drained
- 15 oz black beans drained and rinsed
- 2 cups Mexican blend cheese shredded
- 16 oz corn chips
- 1 large jalapeno seeded and diced
- 1 cup baby bell peppers diced
- ½ cup green onions
- 1 cup salsa
- sour cream, queso, guacamole extra toppings
Brown the beef in a skillet. Once browned drain any fat and then add in the taco seasoning. Add ¼ cup of tap water and simmer to allow the seasoning to combine with the beef.
While the beef is cooking, begin assembling the nachos on the baking sheet.
Layer however you'd like, but I like to go in this order:Chips, half of the shredded cheese, beans, peppers, more cheese, olives, beef, the rest of the cheese. Bake in a 375°F oven for 10 minutes, or until the cheese is melted. Remove and add extra toppings such as salsa, guacamole, sour cream, queso. Lastly, top with green onions, and if desired, cilantro. Serve immediately.
