Using a cast-iron pan gives more flavor, but a large frying pan works fine. Just be sure it is one that can go in an oven, because this recipe starts on the stove, but finishes in the oven. On the stovetop, preheat cast iron skillet then add in avocado oil. While skillet is preheating lightly season the pork chops with salt and pepper on both sides. Once skillet and oil are preheated place pork chops inside and cook for 2 minutes then flip and cook for another 2 minutes. While chops are cooking, slice apples thinly. After 2 minutes on each side, take the pork chops out of the skillet and place on a plate. Add in the apples, cinnamon, nutmeg, chicken stock and the juice of 1 lemon. Let simmer until the apple slices begin to golden. Make wells in the cinnamon apple sauce and place the pork chops back in the skillet. Then place in 375°F preheated oven. Let cook for 15-20 minutes or until the pork chops are cooked through. Once done, top with desired fresh herbs (some of my favorites are chives, mint, and rosemary) and serve immediately.

Adding in pure maple syrup would be super yummy as well. But doing so is not Whole 30 or Keto.
