Salted Caramel Bar Cookies

Ingredients
  

  • 1 cup unsalted butter room temperature
  • cup granulated sugar
  • 1 cup brown sugar packed
  • cup heavy whipping cream
  • 2 large eggs
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • cups quick oats
  • 8 oz Lily’s Salted Caramel Baking Chips
  • 8 oz Heath Bits O’Brickle

Instructions
 

  • In an electric mixer, combine the butter, granulated sugar, and brown sugar. Mix on medium high until a whipped consistency.
  • Add in the eggs+egg yolk, heavy whipping cream, and the vanilla extract. Mix to combine, scraping down the sides of the mixing bowl as you go.
  • In a separate bowl, combine the flour, baking soda, salt, and oats. Whisk until combined.
  • Add the dry ingredients into the wet ingredients ⅓ at a time, mixing slightly in between each addition.
  • Add in the Lily’s Salted Caramel Chips and mix on low to evenly distribute the chips. In a 9x13 inch cookie sheet, grease the bottom and sides, then press the cookie dough down evenly into the cookie sheet.
  • Bake in a 350°F oven for 15-18 minutes or until the sides begin to brown. Remove from oven and sprinkle the Health Bits O’Brickle over the top. Place back in the oven for one more minute. Remove from heat and let cool completely. Serve immediately or store in an airtight container for up to a week.
