S’more Brookies

Equipment

  • muffin pan
  • cupcake liners

Ingredients
  

  • 24 count premade chocolate chip cookie dough
  • 1 box brownie mix plus ingredients needed for the mix
  • 12 large marshmallows
  • 12 regular sized Reese’s Peanut Butter Cups

Instructions
 

  • Line the muffin pan with cupcake liners then take 2 sections of the premade cookie dough and mold them to fit the bottom of the liners.
  • Place an unwrapped Reese’s Peanut Butter Cup over the cookie dough.
  • Make the brownie batter according to the directions on the brownie mix box. Pour equal amounts into the muffin tins over top of the peanut butter cups. Bake in a 350°F oven for 25-30 minutes, or until the brownie batter is completely cooked through.
  • Take out of the oven and place a marshmallow over top of each muffin cup. Place back into the oven on broil and allow the marshmallows to toast on the top. This step is quick so keep an eye on the marshmallows. Remove from oven and serve immediately. If you are not going to serve immediately, wait to do the marshmallow step until right before you serve. Store in an airtight container for up to a week.
