Sweet Chipotle Adobo Pork Tacos

- 2 lb pork tenderloin or pork roast fat trimmed
- 20 oz Coca Cola
- 7 oz Chipotle Chilis in Adobo Sauce
- 4 Tbsp brown sugar
In the Instapot, add the pork, Coca Cola, and Chipotle Chilis in Adobo Sauce. Seal the lid and on the manual setting, pressure cook for 3 hours. If your Instapot is like mine, it will only allow a maximum of 2 hours on the manual setting. To combat this just do 2 sessions of cooking on the manual setting, the first one for 2 hours and the second one for 1 hour. Do not release the pressure in between each cooking period.
Once the 3 hours are up, let the Instapot releases the pressure naturally, don't rapid release the pressure.
When the pressure has been completely released, take the pork out and shred it on a cutting board. Strain the juices and chilis into a bowl or liquid measuring cup. You will want the liquid, but not the leftover chunks.
Add the pulled pork and the liquid back into the Instapot. Add in the brown sugar and stir to combine. Let warm thoroughly for another 15-20 minutes on the warm setting. Serving immediately with favorite taco toppings.
