Equipment

  • instapot

Ingredients

  • 2 lb pork tenderloin or pork roast fat trimmed
  • 20 oz Coca Cola
  • 7 oz Chipotle Chilis in Adobo Sauce
  • 4 Tbsp brown sugar

Instructions

  • In the Instapot, add the pork, Coca Cola, and Chipotle Chilis in Adobo Sauce. Seal the lid and on the manual setting, pressure cook for 3 hours. If your Instapot is like mine, it will only allow a maximum of 2 hours on the manual setting. To combat this just do 2 sessions of cooking on the manual setting, the first one for 2 hours and the second one for 1 hour. Do not release the pressure in between each cooking period.
  • Once the 3 hours are up, let the Instapot releases the pressure naturally, don't rapid release the pressure.
  • When the pressure has been completely released, take the pork out and shred it on a cutting board. Strain the juices and chilis into a bowl or liquid measuring cup. You will want the liquid, but not the leftover chunks.
  • Add the pulled pork and the liquid back into the Instapot. Add in the brown sugar and stir to combine. Let warm thoroughly for another 15-20 minutes on the warm setting. Serving immediately with favorite taco toppings.
