York Peppermint Cookies

- 1 3.4oz Instant Pudding Mix York Peppermint Mix, or regular chocolate if you can't find the York Peppermint Mix
- ¾ cup unsalted butter room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 egg yolk in addition to the 1 egg
- 1 tsp vanilla extract ½ tsp of vanilla and ½ tsp of mint
- 1 tsp baking soda
- ¼ tsp kosher salt
- 2 cups all-purpose flour
- Mini York Peppermint Patties
In a large mixing bowl, add in the butter and sugar. Whip until light and fluffy.
Add in the egg+egg yolk and extract, mix until combined.
Add in the pudding mix, whip again. Add in the flour, salt, and baking soda and mix until combined.
Using a small cookie scoop, drop onto a baking sheet lined with parchment paper or a silicone baking pad. Spread out each cookie mound because they will spread as they bake. Bake in a 350°F oven for 7-8 minutes.
Once the timer goes off, remove the pan from the oven and place an unwrapped York Peppermint Patty in the center of each cookie, pressing slightly into the cookie. Place back into the oven for 1 more minute.
Remove from oven and let cool completely on a cooling rack. Serve immediately or store in an airtight container for up to a week.
