Guys…GUYS!!!! This keto and paleo friendly avocado and lime sour cream dip is A.MAZING! I threw it together last week in an effort to tszuj (pronounced zhuj…I may or may not have spelled it zhuj the first time. My kitchen island is easily the most favorite aspect of my home. It is what sold me on our house. Fennel & Orange Focaccia
Sometimes I like to plan meals with flavors that are the same in each food. The other night I made a Spicy Blueberry & Orange Pork Tenderloin with this Fennel & Orange Focaccia. Not only does each food compliment the other, but it also is a great way to be able to use every part of the specific ingredient. Now that school is in full swing, extracurriculars are consuming our lives, and germs are being passed around…quick dinners have become the norm around here. Super Mom
I’ve always wanted to show the world a photo of my kitchen sink full of dirty dishes. I absolutely cannot go to bed with any dishes in the sink. It is something that just makes my skin crawl…and yet…I’ve had to learn to let that go at times. As my boys have grown I’ve tried to teach them certain traits that their future wives will appreciate…such as dish duty, putting the toilet seat/lid down, not leaving toothpaste in the sink, or leaving dirty socks all over the place. Another chicken salad recipe for the books. This recipe is actually been a regular in this house for a few years. I just LOVE chicken salad…it’s quick, easy, and yummy. Although, this chicken salad isn’t as healthy as the quinoa & arugula chicken salad posted last week. It is equally yummy though. And…if you omit the dried cranberries, it would be keto friendly as well. This recipe makes a lot, and it great for meal prep. Quinoa & Arugula Chicken Salad
This week has been the week of chicken salads. It is easy to create and easy to make a lot of for food prep. I really wanted to figure out a way to incorporate arugula into a recipe, especially a recipe the amigos would hopefully eat. Arugula is super yummy, it is a leaf that has a peppery taste. It is also packed with nitrate which has been proven to help lower blood pressure. It is the same nitrate family as broccoli, brussels sprouts, and kale…and I don’t know about you, but I would MUCH rather consume broccoli and arugula than kale or brussels sprouts. No Oats Oatmeal
Growing up my dad would fix us oatmeal and he would add raisins, which he called flies. While I wasn’t too fond of raisins growing up, I loved it when dad would add them and then tell us to make sure we ate all of the flies. Now that I am an adult, I still love the old school oatmeal my dad makes, but my tastes have expanded. I originally found this recipe here, but I’ve tweaked it a little. Loaded Roasted Cauliflower Bowl
I just love potatoes! Fried, mashed, baked, cubed, you name it…I’ll eat it. BUT…potatoes are full of carbs. While they are healthier carbs than that of white bread or a Snickers bar; they are still loaded with carbs. Thus, potatoes must be eaten in moderation. That’s where cauliflower comes in. I’ve riced it, I’ve roasted it, I’ve steamed it, I’ve mashed it…there isn’t much I haven’t done with cauliflower in recipes.
