Best Potato Salad Ever

I LOVE potato salad! It is possibly my most favorite summer side dish. BUT…there are certain flavors that DO NOT belong in a potato salad. Raw onion flavor, tomatoes, sour cream…big fat NOPE. Potato salad has potatoes, eggs, pickles, and maybe a few extras.

I knew when I began dating Matthew and tasted his mother’s potato salad, that I would have to marry him so I could have her potato salad til the day I died. Her potato salad is seriously the best. It is simple but full of flavor. I committed a cardinal sin and tweaked her recipe. Don’t get me wrong, her original recipe is still the best, but I have to toot my own horn and say that my additions are very tasty.

Best Potato Salad Ever

  • 2 lb baby potatoes cut into chunks and boiled
  • 7 large eggs hard boiled
  • 1 cup dill pickles cut into chuncks
  • 5 strips of bacon cooked and cut into chunks
  • ¼ cup fresh chives chopped
  • ½ cup mayonaisse
  • ¼ cup regular yellow mustard
  • 1-2 tsp salt
  • 1 tsp fresh ground black pepper
  • 2 tsp smoked paprika
  • ½ cup pickle juice


  • In one bowl, combine eggs, potatoes, bacon, pickles, and chives.
  • In a smaller bowl, combine mayonnaise, mustard, salt, pepper, smoked paprika, and pickle juice. Whisk together, pour into the larger bowl. Stir to combine. Refrigerate until ready to serve.

TIPS: I like to use baby potatoes or fingerling potatoes because you don’t have to peel the skins and you have little to no chopping. I also try to makes sure the chunk sizes of each ingredient are proportional, you don’t want giant bits of egg, but every other ingredient has been chopped small. The last tip, I really like to boil my eggs in the Instapot. It is quick and always yields the perfectly boiled egg. Most pressure cookers have an egg setting. Be sure to read the directions for your pressure cooker because each one is different.

This is also a recipe you will want to make way ahead of time. Boiling the potatoes and eggs in the morning for a BBQ in the afternoon, the salad won’t be nice and cold by then. It is best to give the salad at least 8 hours in the refrigerator before serving.
