- 2 lb baby potatoes cut into chunks and boiled
- 7 large eggs hard boiled
- 1 cup dill pickles cut into chuncks
- 5 strips of bacon cooked and cut into chunks
- ¼ cup fresh chives chopped
- ½ cup mayonaisse
- ¼ cup regular yellow mustard
- 1-2 tsp salt
- 1 tsp fresh ground black pepper
- 2 tsp smoked paprika
- ½ cup pickle juice
In one bowl, combine eggs, potatoes, bacon, pickles, and chives.
In a smaller bowl, combine mayonnaise, mustard, salt, pepper, smoked paprika, and pickle juice. Whisk together, pour into the larger bowl. Stir to combine. Refrigerate until ready to serve.
