Chocolate Strawberry Truffle

There are many gifts that are given for Valentine’s Day, and chocolate covered strawberries are definitely a popular one. I decided I wanted to put a spin on the classic chocolate covered strawberry.

While this takes more time than just dipping fresh strawberries in melted chocolate, it does have an element of whimsy. My boys love these truffles and watching them smile over the taste, brings so much joy to my heart. Additionally, if you are not a strawberry lover, you can definitely use raspberries or even blueberries instead.

Equipment

  • silicone candy mould

Ingredients
  

  • 1 cup strawberries blended and strained the seeds
  • 1 cup heavy whipping cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups dark chocolate melting chocolate
  • sprinkles

Instructions
 

  • After preparing the strawberries, pour them into a sauce pot. Simmer, while constantly whisking, until the strawberry sauce thickens almost to a jam consistency. Let cool.
  • While the strawberry sauce is cooling, in a large bowl combine the heavy whipping cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.
  • Add in the cooled strawberry sauce and fold into the whipped cream mixture. Pour the mixture into a piping bag or a large ziploc bag and pipe into the silicone mold. Freeze overnight.
  • Melt the chocolate in the microwave in 30 second increments, stirring between each until the chocolate is completely melted. Take the frozen strawberry cream out of the freezer. Remove from the mold one at a time, coat competely in the chocolate and place on a cooling rack to allow the excess chocolate drip below. Top immediately with desired sprinkles. Freeze again for another hour. Serve immediately or store in the freezer for up to 2 weeks.

Do you love chocolate and strawberries together? You could experiment with the chocolate and use milk or white chocolate instead of dark chocolate. Additionally you could drizzle a contrasting chocolate over the top instead of using sprinkles to decorate as well. Hope y’all are having an amazing week.
