Huli Huli Ramen Chicken
I have come a long way since the packaged ramen noodles days. At one point, in Junior High, my friends and I would eat ramen raw right out of the bag. I don’t know if that is something y’all have done before, but I thought it was the greatest thing since sliced bread at the time. I’ve since learned how hillbilly that is.
Now though, I only have the prepackaged ramen for when a stomach bug tears through the household and kiddos refuse to eat anything. As soon as I realized I could purchase ramen noodles by itself without the packaging and seasoning, my life was changed.
Huli Huli Ramen Chicken
Equipment
- Wok
Ingredients
- 3 large chicken breasts cubed
- ⅓ cup ketchup
- ½ cup brown sugar
- ¼ cup soy sauce
- ⅓ cup shallots diced
- 3 large garlic cloves minced
- ½ cup green onions chopped
- 2 tbsp fresh ginger minced
- ¼ cup chicken stock
- 2 tbsp olive oil
- salt and pepper
- fresh parsley
- sesame seeds
Instructions
- In a wok or large skillet, drizzle 1 tbsp of olive oil over the bottom and begin browning the chicken. Cook it thoroughly, then remove from the pan and let rest on a plate for a few minutes.
- Back in the wok, add in the shallot, garlic, and ginger with the other tbsp of olive oil. Sauté for a minute or so and then add in in the ketchup, green onion, brown sugar, soy sauce, and the chicken stock. Whisk to combine and then continue to whisk while the sauce comes to a rolling boil.
- Add the chicken back into the sauce and let simmer while the ramen noodles cook. Cook the noodles according to the directions on the box for al dente.
- When the ramen is finished, drain it and then add into the chicken and sauce. Toss with tongs to completely coat the ramen. Serve immediately with fresh parsley and sesame seeds to garnish the top.

Huli Huli chicken originated in Hawaii, and it is chicken that is grilled or roasted over an open flame while being marinated with Huli Huli sauce. Huli Huli sauce is the key to the original flavors. There is always an Asian flare of flavor with the garlic, soy sauce, and ginger; but there is also always ketchup or some sort of tomato based sauce. The sauce also has a sweet flavor and that comes from brown sugar traditionally, or honey can be substituted.
Have you ever had Huli Huli chicken? This recipe is definitely tasty and super easy to recreate. And…while the dish is traditional with chicken, it is super tasty with other types of meat, or even a vegetarian version with tofu or grilled vegetables such as mushrooms.
Hope y’all are having an amazing week. Stay safe, be kind, and hug your loved ones.
