Easiest Sticky Rice

Sticky rice is something that I could eat all day long! It’s also something that typically takes a day or two to perfect. Who has time, or the mental capacity to make rice the day before? I don’t! Well, if you are like me, then you will need this recipe in your life.

When boiling any type of grain you typically use the 1:2 ratio. This works for white rice, brown rice, multigrain rice, quinoa, couscous…The 1:2 ration means that for every serving of grain you are going to boil, you need to add in double that in liquid. For example, if you are cooking 1 cup of rice then you will need 2 cups of liquid. This is a general rule for both stove top as well as a pressure cooker.

Rice wine vinegar…if you haven’t encountered this glorious vinegar you have NOT lived! OK, that’s super dramatic, but if you’d like this in your pantry, it can be found in the ethnic food isle or click on the image above. Now, I bet you are asking yourself how this vinegar can make rice better without the vinegar taste…

Well, when you add in a tiny bit of this vinegar into your pot before you begin cooking, it will aid in bringing out the starches in the rice, thus causing sticky rice. I NEVER make rice without rice wine vinegar anymore. Even if the meal I’m making isn’t Asian, sticky rice is just better.

Equipment

Ingredients
  

  • 1 cup Jasmine Rice
  • 2 cups water
  • 2 tsp rice wine vinegar

Instructions
 

  • Add in all of the ingredients in an Instapot and place the lid over top.
  • Set the pressure either to the rice/grain setting for 8 minutes, or manual on high for 8 minutes.
  • Once done pressure cooking, let stand for 10 minutes and then rapid release any pressure left over. Fluff rice with a fork, and serve immediately.

    I just found you 4/10/2021. Newly retired and looking at recipies on-line.
    At top of recipe, I like bits of info -such as rule for boiling grain 1:2 ratio.

    Below the space to post a comment, you included another rule:

    Which is incorrect? The recipe with 1 cup rice and 2 TSP rice wine vinegar or the rule with 1 cup rice with 1 tsp of rice wine vinegar?

    As I haven’t tried it yet and only have a question I didn’t rate the recipe.

      Hello!!! Welcome, so glad you found me! I should clarify the 1:2 ratio. It is 1:2 ratio for the rice to water or liquid. Then for every 1 cup of rice that is added, you add in 1 tsp of rice wine vinegar. So if you are making 2 cups of rice it would be:
      2 cups rice
      4 cups liquid
      2 tsp rice wine vinegar
