Philly Stuffed Peppers
A couple of years ago when Matthew and I decided to go Paleo, I started converting my recipes to make them Paleo and even Whole 30 compliant. My Philly Cheesesteak Sandwiches were one such recipe. These stuffed peppers are also Keto-Diet friendly as well.
My kiddos are NOT fans of peppers, but they absolutely love these Philly Stuffed Peppers…it may or may not be due to the cheese topping-which is not Whole 30 compliant-but is sure tasty!
Philly Stuffed Peppers
Ingredients
- 3 large bell peppers any color, cut in half and seeds removed
- 1 medium onion sliced thinly
- 10 lb roast beef lunch meat
- 1 tsp garlic powder
- ¼ cup Worcestershire sauce
- 1 tsp A1 Steak Sauce
- olive oil
- salt and pepper
Instructions
- Preheat oven to 375°F and grease a baking sheet with non-stick spray and set aside. In a large skillet add in olive oil and sliced onions, saute on medium heat. While onions are cooking, slice roast beef lunchmeat into 1-inch pieces. Add into skillet once the onions begin to brown. Add the Worcestershire sauce, A1 steak sauce, and garlic powder. Pepper to taste, add in salt if desired, but I have found there is plenty of salt already in the Worcestershire sauce and A1 Steak sauce. Let simmer on low while the lunch meat heats up. While waiting for the onion/meat filling to finish, prep the bell peppers. Cut them in half from top to bottom and remove any seeds and ribbing. Place in the prepared baking sheet with the cut side up. Once the meat and onions are done, pill the filling into each cut bell pepper. Place in the oven for 30 minutes. At the 25 minute mark, pull the peppers out and top with the desired cheese slices. Place back in the oven and broil on high for the last 5 minutes to melt the cheese. Serve immediately.

These stuffed peppers are SO tasty you almost don’t miss the bread. They are also extremely filling. I can barely consume one of the half peppers.
