    Lefse

Every holiday season as far back as I can remember, making lefse has been a family tradition. It wasn’t until I became an adult and moved away that I realized just how many steps it takes to create it. The first year I tried my hand at lefse making without parental supervision, I made too large of a batch and it took me several hours four nights in a row to finish baking the batch. I have seriously wised up, and I now have many willing helpers so I don’t have to spend hours in the kitchen. This year was especially fun having these two nerds helping me. I don’t…

    Instapot Funeral Potatoes-Cajun Style

GUYS!!! I upgraded my pressure cooker! My old one was falling apart, and I had definitely used it to it’s fullest potential. So this last Christmas, I decided to ask for a new Instapot with wi-fi potential. Several years ago, I received a wi-fi slow cooker and it changed the game of slow cooking! So when I knew I would be in need of a new pressure cooker, I decided to see if there was one with wi-fi… AND…there is! I have the Chef iQ pressure cooker and I don’t think I could love any appliance more. This baby not only does what my old pressure cooker did: steam, saute,…

    Best Potato Salad Ever

I LOVE potato salad! It is possibly my most favorite summer side dish. BUT…there are certain flavors that DO NOT belong in a potato salad. Raw onion flavor, tomatoes, sour cream…big fat NOPE. Potato salad has potatoes, eggs, pickles, and maybe a few extras. I knew when I began dating Matthew and tasted his mother’s potato salad, that I would have to marry him so I could have her potato salad til the day I died. Her potato salad is seriously the best. It is simple but full of flavor. I committed a cardinal sin and tweaked her recipe. Don’t get me wrong, her original recipe is still the best,…

    Easy Instapot Scalloped Potatoes

I spent my high school years living in Western Idaho. While Idaho is the land of potatoes, I did not see my first potato field until my freshman year of college. A majority of the potato fields are in Southeastern Idaho. Still, my love of potatoes (in all forms) began LONG before I lived in the potato state…and to this day, French Fries are still at the top of my potato loving list. When potatoes and cheese are combined, though…that is a match made in heaven. So when I made scalloped potatoes a few weekends ago, my boys couldn’t get enough or stop thanking me for making them. While this…

    Breakfast Hash & Fried Eggs

Breakfast for dinner is a staple in this household. We have breakfast for dinner at least once or twice a week. Half of the family loves sweet and doughy breakfasts like waffles and pancakes, while the other half goes for savory meals. I’m smack dab in the middle. Sometimes I am feeling Belgium waffles and other times I want a really flavorful breakfast hash. Breakfast hash is actually super quick and easy to make. It is something I live off of whenever Matthew is gone with work. I’ll eat breakfast hash for breakfast, lunch, and dinner. Plus you can make a Mexican spin on it (which is my favorite) or…

Instapot Cheesy Sausage & Tot Casserole

Sometimes I create my own recipes, and other times I steal someone else’s and tweak it. Why do the heavy lifting if someone has already perfected the heavy lifting for you? This recipe is one such case. One typical Saturday night, a Saturday night that wasn’t a date night, I was perusing Pinterest…or as Matthew so endearingly calls it, internet hoarding…when I came across this recipe. As I spent some of my formative years (high school) in potato country, any recipe that is full of cheese and potatoes instantly calls to me. I know, I know…I’m a nutritionist who is working toward her dietetic degree…but a heart wants what a…
