This week’s recipe is brought to you by my in-laws. A long while ago, my mother-in-law compiled a recipe book for a family reunion. Her family is from Eastern Idaho where the food is simple, tasty, and perfect for farm life. I don’t know who on my in-law’s side of the family came up with this perfect dessert, but it quickly became a favorite in our house. It is quick and easy and a huge crowd-pleaser. Mango Salsa
With the weather warming up and seasons growing close to change; it is fun to pull out old recipes that excite my tastebuds. While I usually do not discriminate against any type of salsa; sweet/spicy salsas tend to be my favorite. It gives Mexican foods a nice contrast to the usually salty flavors. My kiddos are lovers of all things pasta…but really who isn’t a fan of noodles? I have two kiddos who love pasta with red sauce, and two who love pasta with white. While I am a carnivore at heart, I do love a good meatless meal. The American Heart Association’s recommendations with meat, poultry, and, eggs are 8-9 servings a week. I love kabobs, but I hate the tedious task of grilling them. Oven roasting kabobs gives the same smokey flavor, without the need to stand next to the grill. Kabobs are also a fun dinner for my boys. I am always looking for ways to spice up rice and genius hit me the other day when I was listening to this song… Well..technically I was watching Practical Magic and the Lime in the Coconut song came on and that is when the lightbulb occurred.
