Grilled Steak & Veggie Rolls
I am a carnivore at heart. I love a yummy salad, but not much can beat a really good steak. After dad’s heart attack and surgery, I was on the hunt for foods and recipes that still had the familiar flavors my dad loves but were heart healthy. While red meat isn’t the most heart-healthy protein out there, I wanted to show my dad that he didn’t have to give up everything he loved…that if prepared right and consumed in moderation he could still enjoy and indulge occasionally.
I found some sirloin side tip steak, which happens to be one of the leanest cuts of beef, for a good price at the grocery store. Then I perused the produce section. I found some yummy green beans and bell peppers. I also wanted to season the steak without needing to use salt. As I was in the seasoning aisle I found this…
Salt-free seasoning…and it did not disappoint. I know I could’ve concocted my own seasoning blend, but I didn’t want to have to think about it at the time. It was a pleasant surprise to find this.

Grilled Steak & Vegetable Rolls-yields: 8 5oz servings
ingredients:
3-4 lean cut steak, I prefer sirloin side tip
2-3 different kinds of fresh vegetables, I used green beans, bell peppers, and an onion but asparagus or zucchini would be yummy too
Weber No Salt Steak Seasoning
non-stick spray, optional

parchment paper

I grilled these on my cast iron griddle for my stove top, which is why I needed non-stick spray. If you grill these outside, you probably would not need the non-stick spray. While your grill is preheating, take each steak and place a piece of parchment paper on top. Then take a meat mallet and tenderize the meat until the thickness is no more than 1cm. If it is more than that it will take longer to grill and the vegetables will most likely remain on the raw side. After tenderizing the steaks, season the side up with your choice of seasoning and line up the sliced vegetables down the center of the steak. Roll the beef around the vegetables and secure the opening with a couple of toothpicks. Season the outside of the steak. If using a cast iron griddle, spray non-stick spray on before placing the rolls on top. Once rolls are placed on the grill, tent the top with a piece of foil to keep the moisture trapped so the steak remains tender and the vegetables cook. Grill each steak roll until the desired doneness. Serve immediately.
