Summertime Avocado and Corn Salad

I have a major addiction…to avocados.  Just about anything with avocados in the recipe, I will dive in head first no questions asked.  We go through 1-2 bags of avocados from Sam’s Club or Costco in a week.  I think we end up going through more avocado bags than gallons of milk.  So when a friend posted this recipe link on her facebook, I just had to run out and get all of the ingredients immediately.  SO YUMMY!  So satisfying, so easy!  I omitted the hard boiled eggs the first time I made it because I was going to be taking it to a Fourth of July BBQ and I didn’t want it to sit out in the heat with eggs.

The second time I made it, I added in the eggs but ended up omitting the chicken.  Instead, I added in chopped up cucumber.  While both versions were super yummy, I much prefer the way I made it the first time.  I do like hard boiled eggs, but I’ve decided they need to stay in potato salad for the most part.  I felt like the eggs were all I could taste when I added them in.  I also just thawed out a bag of frozen corn instead of cutting the kernels off of cobs.  Just as tasty, but no leftover corn silk strands…and less work.  This salad is now in our normal weekly rotation of yummy foods.  Best of all, this recipe is heart healthy if you either omit the bacon or use turkey bacon instead.  There is no dairy or gluten either!  Have you tried this recipe?  Do you have any super yummy recipes with avocados you’d like to share?  Hope y’all are having a fabulous week and are staying cool in the summer heat.
