Philly Stuffed Peppers
A couple of years ago when Matthew and I decided to go Paleo, I started converting my recipes to make them Paleo and even Whole 30 compliant. My Philly Cheesesteak Sandwiches were one such recipe. These stuffed peppers are also Keto-Diet friendly as well. My kiddos are NOT fans of peppers, but they absolutely love these Philly Stuffed Peppers…it may or may not be due to the cheese topping-which is not Whole 30 compliant-but is sure tasty! Not only are these stuffed peppers delicious, but they are extremely easy…only 7 ingredients! These stuffed peppers are SO tasty you almost don’t miss the bread. They are also extremely filling. I can…

Easy Homemade Smoothie Bowls
A recent food trend has been acai bowls or smoothie bowls. They are super yummy and filling. Most often they are also packed with vitamins and minerals and very heart-healthy. The place that is close to my house is one of my most favorite places to treat myself to…but, one bowl is $9 and for that much, I can make my whole family their own smoothie bowls at home. While it is super convenient to have someone else make one for you, I do enjoy creating them at home where I can control the ingredients. The key to smoothie bowls is to make sure the thickness of the puree is…

Quick Instapot Lasagna
My family has absolutely no Italian heritage, but my boys could eat anything pasta and/or anything with cheeses and marinara til they die. When I cook a recipe and can make it super quick in my instapot, everyone is happy. This recipe takes less than 30 minutes start-to-finish and is a definite crowd pleaser. If you want the vegetarian/vegan version or the gluten-free tips then scroll to the bottom. Enjoy! To make this dish vegetarian, instead of pork sausage, diced eggplant and zucchini are super yummy. Once the olive oil has been drizzled, add in the diced eggplant and zucchini and just saute slightly with the dried onions and red…

Paleo Apple Cinnamon Pork Chops
Growing up, pork chops and applesauce was a staple meal in my house. It brings back a lot of memories, but it is also a very simple flavored meal. When I saw some amazing cuts of pork chops at my local butcher I knew exactly what I wanted to do with them. This recipe is a zhuzhed up version of my childhood applesauce and pork chops. Not only are the ingredients in season, which makes me super happy, but this recipe is Whole 30, Paleo, and Keto all rolled into one. It may look complicated, but it is ALMOST as easy as grilling pork chops and pouring applesauce on top. Keep…

Keto Avocado and Lime Sour Cream
Guys…GUYS!!!! This keto and paleo friendly avocado and lime sour cream dip is A.MAZING! I threw it together last week in an effort to tszuj (pronounced zhuj…I may or may not have spelled it zhuj the first time. Hey, I never said I was good at spelling) up the street tacos I had planned on having for dinner. My avocados weren’t 100% ripe so I decided to puree them with other yummy ingredients. This dip is yummy on top of tacos, enchiladas, as a spread in a sandwich and as a dip with chips. You definitely need to try this ASAP. Avocado and Lime Sour Cream Dip ingredeints: 1 large avocado…

Quick Dinners & Pantry Staples
Now that school is in full swing, extracurriculars are consuming our lives, and germs are being passed around…quick dinners have become the norm around here. I definitely love pouring my heart into preparing meals for friends and family, but most often I just don’t have the time or energy during the week to be very elaborate. Healthy, yummy meals are still my top priority…but there are plenty of meals that can be prepared quickly and are still healthy. Quinoa, Jasmine rice, and various types of pasta are always in my pantry. Quinoa bowls are a weekly occurrence in my house. It is easy to cook and easy to flavor. Some of my…

Cream Cheese Chicken Salad Wraps
Another chicken salad recipe for the books. This recipe is actually been a regular in this house for a few years. I just LOVE chicken salad…it’s quick, easy, and yummy. Although, this chicken salad isn’t as healthy as the quinoa & arugula chicken salad posted last week. It is equally yummy though. And…if you omit the dried cranberries, it would be keto friendly as well. This recipe makes a lot, and it great for meal prep. My favorite way to eat is on a fluffy, butter croissant, but that would cause it to be super unhealthy…so in an effort for moderation, lettuce wrapping the chicken salad is a great substitute. …

No Oats Oatmeal
Growing up my dad would fix us oatmeal and he would add raisins, which he called flies. While I wasn’t too fond of raisins growing up, I loved it when dad would add them and then tell us to make sure we ate all of the flies. Now that I am an adult, I still love the old school oatmeal my dad makes, but my tastes have expanded. I originally found this recipe here, but I’ve tweaked it a little. I like to make this in advance, but not more than a few days. The crispiness begins to change and the texture becomes funny. I also like to top it with several variations. …

Loaded Roasted Cauliflower Bowl
I just love potatoes! Fried, mashed, baked, cubed, you name it…I’ll eat it. BUT…potatoes are full of carbs. While they are healthier carbs than that of white bread or a Snickers bar; they are still loaded with carbs. Thus, potatoes must be eaten in moderation. That’s where cauliflower comes in. I’ve riced it, I’ve roasted it, I’ve steamed it, I’ve mashed it…there isn’t much I haven’t done with cauliflower in recipes. This recipe though, I have to say was WAY better with the roasted cauliflower than with potatoes. My mouth was so happy with these flavors that I was rather sad when the bowl was empty. If you’d like to…

Beef Street Tacos
First recipe of my meal planning series with shredded beef brisket cooked in the instapot. These street tacos are addicting! I had a hard time stopping myself at just 2 tacos…and I’m already looking forward to eating more tomorrow. This recipe is super easy and quick after you’ve already roasted the beef brisket in the instapot. Takes 30 minutes or less. The original instapot beef brisket recipe is linked below. Beef Street Tacos ingredients: Shredded beef brisket, at least 2 cups (click for link to brisket recipe) 2-4oz diced green chilies 1 cup low sodium beef stock Street taco shells Mexican blend cheese Mango Pineapple Salsa Fresco directions: Place the…
