Sometimes when I meal plan for a week, I like to make it as easy as possible. Which means cooking a large amount of a protein and then divvying it up between several meals. One of my favorites is to roast a beef brisket in my instapot. Whenever I do this I make sure I roast enough protein to be able to use in at least 3 meals. I’ve been wanting to incorporate quinoa into my diet, but I was afraid because the last time I tried to make something with it the taste was awful. Meal planning this week has pretty much been non-existent. We have so much going on with this being the last week of school, that I don’t know when or where we will be every night around dinnertime. I have my staples like marinara, pasta, meatballs, hashbrowns, eggs etc. So we do have food I can throw together in a pinch. Mac’n’cheese is a favorite for most people; definitely a favorite of my boys. Except they are super picky about the flavors, they usually prefer the fake Kraft mac’n’cheese with the powder. Meal Planning Monday
When I meal plan each week, I like to have some quick dinner options, especially for days full of chaos and activities. A few family favorites are cheese tortellini with marinara sauce and Teriyaki Pineapple Chicken Meatballs that are found at Costco. Both are no-thinking foods that I don’t have to spend hours in the kitchen for. Another thing I love to do is roast veggies for a side dish. Instapot for the win again tonight. Everyone loved this Taco Chicken Soup. Super easy and quick recipe, as well as a cheap meal. Also, this recipe fits into the Macros diet. The consistency was in between a soup and a chili so this would be perfect over a baked potato, russet or sweet. Serving size is approximately 1.4 cups when converted from grams.

Mondays are my meal planning and prep days. I know…it’s somewhat unusual. Most people like to plan, shop and prep on the weekends. I find planning and prepping during the week, while the older amigos are at school, is not only easier but gives me time to be more creative with the meals I choose. With Bean and Keegs approaching teen years, their appetites have increased significantly in the last year. I’ve had to get rather creative with meals and snacks to keep them appeased and well fed. Instapot Honey Sesame Chicken and Rice Bowl
Another instapot recipe win for our family. I even substituted cauliflower rice for the jasmine rice. The chicken was moist and flavorful and the sauce was a nice consistency. Keegs said he thought it was spicy, but the rest of us completely disagreed. In all, I only spent 35 minutes preparing and cooking; and any recipe that is yummy and quick/easy to prepare is a win in my book. This meal will definitely be added to our monthly rotation. Hawaiian Kalua Pork-Instapot
I.AM.LOVING…my instapot!!!!!! Best appliance ever! My mom even showed me how to hard boil eggs in it yesterday. Tonight I made this recipe and it was a huge hit with all 4 boys…well the 3 amigos and Mr. Man. Mr. Man kept saying the pork smelled like bacon…can’t go wrong with bacon smell. The only 2 changes I made with the recipe was that I had to cook the pork roast for 65 minutes for it to be fork tender and I added 2 cloves of garlic minced to the marinade. It even tasted amazing with cauliflower rice.
