    Homeschooling: Free Online Educational Games

Now that homeschooling is a thing nationwide, I thought it would be helpful to share the online educational games that my boys enjoy on a regular basis. While I definitely don’t yet classify myself as a homeschooling veteran, I have picked up quite a few tips and tricks since starting homeschool last August. I have many age groups so I need online games that can cater to many grade levels. The amigos’ current favorite site is Kahoot! It is a fun-filled site with games, quizzes, and beginner coding programs. Topics range from science, math, media, Disney, superhero, apps, and more. Kids can also create their own games and quizzes. Kahoot!…

    Banana Walnut Bread

Bananas are a food that doesn’t last terribly long in this house. They are consumed quickly, on average we go through 3 bunches of bananas a week. It’s like I never feed these boys. With this social distancing going on, I may have stocked up on bananas more than usual, so this week I had enough to make a couple of loaves of banana walnut bread. There are many versions of banana bread, some use pecans, others add in chocolate chips. This good o’le version is definitely my favorite. While pecans are tasty, I prefer walnuts. I think this recipe is my favorite because it is relatively lactose-free with no…

    Almond Joy Chia Pudding

If my husband could replace me with an Almond Joy candy bar, I’m fairly certain he would. The combination of chocolate, coconut, and almond is just his jam. When I created the PB Chocolate Chia Pudding a while ago I knew I would have to figure out an Almond Joy version. I know the PB Chocolate version was a huge hit and tastes WAY more decadent than it actually is. So is this one, it ticks all of the tasty boxes and also is low in fat, carbs, and sugar. This is definitely a healthier, just as tasty alternative to the candy bar. Do you have a go-to chia pudding…

    Strawberry Freezer Jam-3 Ways

Growing up, my parents were big into canning, and my sister caught the bug. Me though, I don’t can. I purchase cans, and I gladly take jars of canned goods offered from my parents, but canning…NOPE. Freezer jam, on the other hand, is well…my jam. I love freezer jam, strawberry my being my favorite, just triple berry is great as well. This recipe will work for both. In the past, I made freezer jam with sugar, but I wanted to figure out how to make it healthier. In my attempts, I was able to create 3 variations, one with honey, one with agave nectar, and one with Swerve sweetener. Each…

    Hot Fudge Sundae Cake

This week’s recipe is brought to you by my in-laws. A long while ago, my mother-in-law compiled a recipe book for a family reunion. Her family is from Eastern Idaho where the food is simple, tasty, and perfect for farm life. I don’t know who on my in-law’s side of the family came up with this perfect dessert, but it quickly became a favorite in our house. It is quick and easy and a huge crowd-pleaser. Does your family have a recipe that everyone loves? Is your family like mine and has its very own family cookbook? Hope y’all have an amazing week!

    Quick Cashew Chicken

Well, I did it! I made it through my first Foodie February and blogged a recipe every weekday. It was definitely a challenge for me at times, but I thoroughly enjoyed all of the cooking and baking. I came up with a lot of recipes and perfected others. BUT don’t despair, I still have plenty up my sleeve and several upcoming recipes I am pretty proud of. I couldn’t give away all of my secrets in February. I LOVE Asian food. Ok, let’s be honest, I just love food…especially ethnic foods. But, Asian food is definitely in my top 3. When I finally purchased a wok, I just about cried.…

    Sweet Chipotle Adobo Pork Tacos

Tacos are one of my most favorite foods, so I am constantly attempting new ways to reinvent the taco…and I am definitely not an inventor. Let’s be honest, none of my taco recipes are world-changing, but they are extremely tasty! Individuals who create fusion foods such as the ramen burger, or the sushi burrito have changed the food world. I’m just on the hunt for food that makes my taste buds sing and keeps my kiddos from complaining. AND…my boys did not complain about these tacos. In fact, even though I made enough for 12 people, the leftovers did not last long at all. The flavors are impactful being sweet…

    Mango Salsa

With the weather warming up and seasons growing close to change; it is fun to pull out old recipes that excite my tastebuds. While I usually do not discriminate against any type of salsa; sweet/spicy salsas tend to be my favorite. It gives Mexican foods a nice contrast to the usually salty flavors. Pineapple salsa and mango salsa are some of my most favorites. I’ve also made kiwi salsa, which is a fun variation to the typical yellow tropical fruit salsas. Another reason I like this salsa recipe is there are no added oils. Other than a sprinkle of salt, pepper, and granulated sugar, there are no added condiments to…

    Pink Lemonade Cake Pops

I’m gonna say it…I love cake! The moist, spongy texture of the cake and the creamy flavors of the frosting. My mouth does a happy dance every time I consume cake. When cake pops came along in 2008, (yes I Googled the year) I knew my inner fat kid was doomed. I’ve been wanting to master cake pops, but let’s face it, it is much easier to just swing by the closest Starbucks and indulge in their delectable cake pops. BUT…when I realized just how easy cake pops are to make at home, well let’s just say that my family is all cake popped out. The principle in creating cake…

    Chicken Alfredo Spaghetti Bake

My kiddos are lovers of all things pasta…but really who isn’t a fan of noodles? I have two kiddos who love pasta with red sauce, and two who love pasta with white. I have to walk the pasta fine line and create recipes that they all will enjoy. One such recipe is anything with alfredo sauce. It has the spices and garlicy flavors of red sauce, with the cheesiness of the white sauce. Most of the time, I make alfredo on the stovetop, but I thought it would be fun to do a bake with it this time around. My husband brought home spaghetti bits for our food storage last…
