    Air Fried Cauliflower Bites

    I bought Mr. Man an air frier for Father’s Day, it arrived midweek last week and we’ve already used it 5 times.  A majority of the time we make sweet potato fries, because…well…sweet potato fries!  Need I say more?  The other night I decided to use up the last of the cauliflower florets that I had left over from making cauliflower rice earlier in the week.  And now air fried cauliflower bites are in our normal rotation.     Friday Favorites

    This week’s Friday Favorites are all over the place.  I’ve been spending the last 2 weeks driving to and from the hospital every day.  So all of these items have been a lifesaver as I have been spending as much time with my dad as possible.  He’ll have one more week of recovery at the hospital from his double bypass surgery and then he will be at my house for at least a week before he and mom head back home to Idaho.   These first two items go hand-in-hand.  The DULLA battery pack holds 4 charges for an iPhone X and has a flashlight built in.  I also purchased…

    I have to admit, I am totally distracted at the moment because I am attempting to write this post while cheering the Vegas Golden Knights in the 4th game of their playoffs.  I definitely am not a multitasker!  But I just have to share this week’s favorites.  Most of them are practical and have definitely aided in making my mom life easier.     Meal Planning Monday

    When I meal plan each week, I like to have some quick dinner options, especially for days full of chaos and activities.  A few family favorites are cheese tortellini with marinara sauce and Teriyaki Pineapple Chicken Meatballs that are found at Costco.  Both are no-thinking foods that I don’t have to spend hours in the kitchen for. Another thing I love to do is roast veggies for a side dish.  Roasted carrots are the ultimate favorite, but roasted asparagus comes in a close second.  When you roast vegetables in only some olive oil it brings out their natural flavors.  So when carrots are roasted, they get super sweet and when asparagus…

    Meal Planning Monday

    Mondays are my meal planning and prep days.  I know…it’s somewhat unusual.  Most people like to plan, shop and prep on the weekends.  I find planning and prepping during the week, while the older amigos are at school, is not only easier but gives me time to be more creative with the meals I choose.  With Bean and Keegs approaching teen years, their appetites have increased significantly in the last year.  I’ve had to get rather creative with meals and snacks to keep them appeased and well fed.  Someday soon I will have 4 boys who are teenagers and older and I suspect that I will feel like I am…

    The best way to make yourself start running again…sign up for a race.  Technically I haven’t signed up for a race, but I am definitely making a list.  My favorite race to run, in the fun category, is the Rock’n’Roll run the Strip race that is every November here in Vegas.  The energy of the crowd and the ability to run the Boulevard with hundreds of thousands of other individuals, at night, under the lights…not much else can give you that runner’s high.
