    Philly Stuffed Peppers

A couple of years ago when Matthew and I decided to go Paleo, I started converting my recipes to make them Paleo and even Whole 30 compliant. My Philly Cheesesteak Sandwiches were one such recipe. These stuffed peppers are also Keto-Diet friendly as well. My kiddos are NOT fans of peppers, but they absolutely love these Philly Stuffed Peppers…it may or may not be due to the cheese topping-which is not Whole 30 compliant-but is sure tasty! Not only are these stuffed peppers delicious, but they are extremely easy…only 7 ingredients! These stuffed peppers are SO tasty you almost don’t miss the bread. They are also extremely filling. I can…

    Missed Spiritual Promptings

I have been obsessed with personal revelation and spiritual promptings for a few years now. I have had an overwhelming desire to grow closer to Heavenly Father and have His hand in my everyday life so I can be a spiritual light for my family. Irony is what it is called when you continually pray to be open and receptive to the Holy Ghost and His promptings, but then you miss them…completely. I guess I could say I missed these particular promptings because I’m a novice at recognizing the ever-present promptings. Or maybe my expectations of promptings are too great; assuming that every spiritual encounter is powerfully obvious. As I…

    Creamy Chicken Mexican Chili

The weather has finally dropped below 90°F here in Las Vegas. The stores are full of Halloween costumes and decorations. Every coffee shop is offering all things pumpkin spice. All I can think about is soups and chilis. I LOVE soup! I LOVE chili…but I cannot bring myself to consume either when the weather is hot. SO…now that the temperature is ‘cool’ by Vegas standards, I am more than ready for soups and chilis. All summer, I thought about this particular recipe. Just like with my cinnamon roll recipe, I love finding variations to chili recipes. There are seemingly endless possibilities. BUT…while I am unlucky and have zero Hispanic genetic…

    Marvelous Mothers: Miss Joy

I have had the privilege of knowing…and am related to…Miss Joy for almost 11 years now. She is married to my husband’s younger brother, Eric, and currently has 4 beautiful children. Her oldest Olivia is such a joy to be around and is constantly trying to include everyone. She is also an excellent example to others and strives to always choose the right. Landon is Joy’s second oldest and the only boy. He is SUCH a handsome dude and SO stinkin’ smart. He always seems to have a look of awe on his face like he is constantly taking in his surroundings. Ellie is the third child and she is…

    Marvelous Mothers Series

This is a series I’ve been thinking about…obsessing about…stewing about for a good long while. I mean years of obsession and stewing. Growing up I was never one to think about motherhood. I grew up with an amazing momma, but my younger sister was the one who was constantly dragging her dolls around and talking about how she wanted to have 12 kids someday. Maybe I didn’t think about having kids because I was more concerned with climbing trees and jumping off the swing trying to set a new swing jumping world record. Or maybe it was due to being the oldest to five siblings and I’ve had my innate…

    Cheesy Manicotti

A few weeks ago I decided I would involve the amigos more in meal planning and cooking dinner. I told each of them to decide on a dinner they wanted to help me prepare. Bean chose the easy way and wanted to do precooked tortellini with marinara sauce. His reasoning was if he aimed low in the beginning his only option was to move up. Then Keegs decided he wanted his absolute favorite dinner, which I refuse to make most of the time, Hawaiian Haystacks…if you don’t know what these are, then you most likely aren’t Mormon. You see…Mormons have this urge to create some of the yummiest, yet most…

    Chocolate Chip Banana Bread

Being the mother to 4 boys, we go through bananas like the apocalypse is tomorrow. It is a rare occasion when we have overly ripe bananas that I can use to create banana bread or muffins. Goob especially loves bananas, having one for breakfast has become a ritual for him. His whole day is thrown off if he doesn’t start with a banana. By some miracle, last week I had 3 overly ripe bananas I needed to do something with. I also had some sour cream that needed to be used up. I remembered that sour cream in other baked goods causes the texture to be fluffy and light. That…

    Almond Joy Clusters

Sometimes I’m an amazing wife and I create a treat out of Matthew’s favorite candy bar. Other times I just buy him the candy bar. Over the weekend, I decided to be the amazing wife. Almond Joys…really anything with chocolate and coconut, are Matthew’s go-to when it comes to a sweet treat. He even loves to add coconut syrup to his Dr. Pepper. So when I was hurrying through the grocery store last Saturday to pick up last-minute items for dinner, and I ran right past a huge vat of raw almonds, inspiration struck. Isn’t it funny how inspiration just does that at the most unusual times? In my rush…

Legoland: How to Maximize Your Visit

Legos have been a staple in my boys’ lives for as long as I can remember…and ever since the Lego Movie came out, the 3 Amigos began begging to visit Legoland. Last year we made the decision to finally go as a family. We purchased a 3-day visit hopper pass that could be used within a year of the purchase date. Thus, attending Legoland 3 full days within a year, I have been able to make a list of the top 10 tips to maximize your visit to Legoland. I might add, we went to Legoland California. While I have never been to Legoland Florida, I am assuming that most…

    Raspberry Sweet Rolls

I’ve been playing around with variations of my Better Than Cinnabon Cinnamon Rolls. I know, why fix it if it isn’t broken…but sometimes a girl wants something different. This last week I decided to try my hand at making a raspberry filling. This filling was full of flavor and a nice fall addition to the cinnamon roll family. Do you have an amazing cinnamon roll variation? I am toying with the idea of doing a Nutella sweet roll next. Do you have any suggestions? Hope y’all are having an amazing day.
