    This week’s Friday Favorites are all over the place.  I’ve been spending the last 2 weeks driving to and from the hospital every day.  So all of these items have been a lifesaver as I have been spending as much time with my dad as possible.  He’ll have one more week of recovery at the hospital from his double bypass surgery and then he will be at my house for at least a week before he and mom head back home to Idaho.   These first two items go hand-in-hand.  The DULLA battery pack holds 4 charges for an iPhone X and has a flashlight built in.  I also purchased…

    Heart Healthy Fried Cauliflower Rice

    My family has made a very conscious decision to begin a more heart-healthy lifestyle.  Mr. Man and the 4 amigos as well as my parents, siblings and their families; we’ve all decided it is time to make a permanent change together.  As I have been researching heart-healthy foods and recipes, I’ve noticed it isn’t as hard as I assumed it would be.  The recommendations from the American Heart Association as well as the CDC and Mayo Clinic all suggest low sodium, low-fat diet with complex carbs and plenty of fruits and vegetables.  For an individual who has hypertension, high cholesterol, and/or heart disease (especially if they’ve had a cardiac event) the…

    Kid Laughs-Jokes and Riddles

    Instapot Mongolian Beef

    Meal planning this week has pretty much been non-existent.  We have so much going on with this being the last week of school, that I don’t know when or where we will be every night around dinnertime.  I have my staples like marinara, pasta, meatballs, hashbrowns, eggs etc.  So we do have food I can throw together in a pinch.  Tonight is the only night we have where I planned instead of whipping something up.  This Mongolian Beef was a huge hit tonight.  It only took me 10 minutes to assemble, and then another 20 minutes in the instapot to cook.  In fact, it took the rice longer to cook…

    I have to admit, I am totally distracted at the moment because I am attempting to write this post while cheering the Vegas Golden Knights in the 4th game of their playoffs.  I definitely am not a multitasker!  But I just have to share this week’s favorites.  Most of them are practical and have definitely aided in making my mom life easier.     Creamy Chicken Enchiladas

    My Road to Motherhood

    Growing up I was not one of those girls who fantasized about getting married and becoming a mom.  It wasn’t that I didn’t want to marry and have children; I just assumed it would happen when it happened.  I grew up with an amazing mother, one who has been a wonderful example to me, which is probably partly why I just assumed I would be a mom someday.  My mom would have snacks ready at the kitchen table for my siblings and I  every day after school and we would sit, complete our homework, and tell her about our day.  When I did think about my future and when I would…

    This week’s favorites are kind of an eclectic group; a little beauty, a little baby, a little fashion and a favorite food.  Any way it’s sliced, these are favorites, have made my life either easier or happier or both.  And let’s be honest…food, especially a new favorite food ALWAYS makes me happy!
